Minty Marshmallows - not my normal post

In September, I wrote a post about bales of hay wrapped in green that looked like mint flavored marshmallow.  Since then, my whole family has wondered why no one makes them.   Then this week, while searching for a recipe for Christmas cookies, my cookbook fell open to a recipe for marshmallows.
That was it, since I had mint flavoring on hand, I had to make them.

Here's the recipe for those who want to try it.

Marshmallows

2 tbsp gelatine
1/2 cup cold water
2 cups white sugar
3/4 cup water
pinch salt
1 tsp mint extract

Soak gelatine in 1/2 cup cold water. Heat sugar in 3/4 cup water until dissolved, boil for 1 minute.
Add gelatine to syrup and bring to a boil.

Remove from heat, let stand until partially cool.
Add salt and flavoring.

Beat with rotary beater or electric mixer until stiff.
Dust pan with icing sugar and pour in 1/2 inch deep.

When set, cut into squares with a knife dipped in cold water.

Roll in icing sugar.

They are very soft the first day so I let them dry for a day and they had a crust that everyone preferred.

  3. This sounds fun, I need to give it a try. I used to eat caramel covered marshmallows and some witha toasted coconut on the outside. Just put a few in cocoa for breakfast and the mint would add a nice touch.

  4. a cup of coco a with some homemade minty marshmallows sound heavenly. This is the second time I've come across a recipe for marshmallows. I had never thought before to try and make my own

  7. I'm very tempted to have a go, Carole - or maybe let the grandsons do it! - but am I right in thinking the 'cups' you refer to are American 'cups'? They're not quite the same as English ones!

  9. That's too funny! I was JUST thinking of you and that mint marshmallow post and picture the other day as I drove past some hay bales..(mine just look like mini-wheats!)
    I was wondering if anyone had pursued that idea yet!

Carole, these treat do look great with some hot cocoa nad perhaps we will also give them a try as we have a bag of marshmallows that never got roasted this summer...but then Grenville did set up a chimera on the patio and says we can do them in winter now too - rather have the hot coca with them!
